Ingredients1.5 lbs (700g) salmon fillet, skinned and cut into 1-inch (2.5cm) cubes
1 tbsp olive oil or avocado oil
1/2 cup (120ml) soy sauce
1/4 cup (60ml) honey
2 tbsp rice vinegar
1 tbsp fresh ginger, minced
2 cloves garlic, minced
1 tsp sesame oil
Optional: 1 tsp cornstarch (dissolved in 1 tbsp water, to thicken the sauce)
For Garnish:
2 tbsp toasted white sesame seeds
2 green onions, thinly sliced
A pinch of microgreens or delicate chili threads
Serving Suggestion:
3 cups cooked jasmine or basmati rice
Instructions
Prepare the Marinade: In a medium-sized bowl, whisk together the soy sauce, honey, rice vinegar, minced ginger, minced garlic, and sesame oil. Set aside about 1/4 cup of this mixture for glazing later.
Marinate the Salmon: Place the cubed salmon in a large bowl or a Ziploc bag. Pour the remaining marinade over the salmon, ensuring each cube is coated. Allow to marinate for 10-15 minutes (do not marinate for too long, or the texture of the salmon will change).
Prepare the Rice: While the salmon marinating, cook your jasmine or basmati rice according to the package instructions. Keep warm.
