Garlic Butter Pasta Recipe

Ingredients

  • 1 lb (454g) pipette or shell pasta

  • 6 tablespoons unsalted butter, divided

  • 6 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes (optional)

  • 1 teaspoon dried oregano

  • 1/2 cup grated Parmesan cheese

  • Fresh lemon wedges, for serving

  • Fresh oregano and thyme sprigs, for garnish

  • Flaky sea salt and cracked black pepper, for seasoning

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pipette pasta and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.

  2. Make the Garlic Butter Sauce: While the pasta cooks, melt 4 tablespoons of butter in a large skillet or Dutch oven over medium heat. Add the minced garlic and sauté for 30-60 seconds until fragrant, being careful not to burn it. If using, add the red pepper flakes and dried oregano.

  3. Create the Creamy Sauce: Turn the heat to low. Whisk in the reserved pasta water and heavy cream. Bring to a gentle simmer.

  4. Toss and Finish: Add the drained pasta directly to the skillet. Toss to coat well in the sauce. Add the remaining 2 tablespoons of butter and the grated Parmesan cheese. Toss until the cheese is melted and the sauce is creamy.

  5. Serve: Season with sea salt and cracked black pepper to taste. Serve immediately, garnished with fresh oregano sprigs, thyme, and a lemon wedge for squeezing over the top.
