Quick & Easy Hamburger Potato Casserole
If you need a cozy, crowd-pleasing dinner that doesn’t require a culinary degree or hours in the kitchen, this hamburger potato casserole is your answer. It layers seasoned ground beef, tender potatoes, and an abundance of melted cheese into a bubbly, comforting masterpiece. It's perfect for those chaotic weeknights when you want a home-cooked meal without the fuss.
Ingredients
1.5 lbs ground beef (lean works best so it's not too greasy)
1 small yellow onion, finely diced
2 cloves garlic, minced
4 large russet or Yukon Gold potatoes, peeled and sliced into thin rounds (or cubed)
1 can (10.5 oz) condensed cream of mushroom soup (or cream of celery)
1/2 cup milk
2 cups sharp cheddar cheese, shredded (divided)
1/2 tsp paprika
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Step-by-Step Instructions
Prep the Oven and Pan: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with non-stick cooking spray.
Brown the Beef: In a large skillet over medium-high heat, cook the ground beef and diced onion together until the meat is entirely browned and no longer pink. Drain off any excess fat. Stir in the minced garlic and cook for about 1 more minute until fragrant. Season generously with salt, pepper, and paprika.
Mix the Sauce: In a medium bowl, whisk together the condensed cream soup and milk until smooth. Stir in half of the shredded cheddar cheese.
Layer the Casserole: Arrange half of your sliced potatoes in an even layer at the bottom of the prepared baking dish. Spread the seasoned ground beef mixture evenly over the potatoes. Pour the soup mixture over the beef, and top with the remaining potato slices.
Bake: Cover the dish tightly with aluminum foil. Bake for 45 to 50 minutes, or until the potatoes are completely tender when poked with a fork.
Make it Cheesy: Remove the foil, sprinkle the remaining cup of cheddar cheese evenly over the top, and pop it back into the oven uncovered for an additional 5 to 10 minutes, or until the cheese is melted, bubbly, and slightly golden.
Serve: Let the casserole rest for about 5 minutes before slicing. Garnish with fresh parsley and enjoy hot!
