It takes just minutes to throw together, making it the ultimate homemade lunch solution!

Ingredients

  • 3 cups cooked chicken breast, shredded or diced (Rotisserie chicken works wonderfully for saving time!)

  • 1/2 cup mayonnaise (you can substitute half with plain Greek yogurt for a lighter touch)

  • 1 cup red grapes, halved

  • 1/2 cup celery, finely diced

  • 1/3 cup sliced almonds, toasted

  • 1/4 cup red onion, finely chopped

  • 1 tbsp fresh dill or parsley, chopped

  • 1 tbsp freshly squeezed lemon juice

  • 1/2 tsp salt (or to taste)

  • 1/4 tsp black pepper (or to taste)

Instructions

  1. Prep the Chicken: If you aren't using pre-cooked rotisserie chicken, cook your chicken breasts until tender, let them cool, and then shred or dice them into bite-sized pieces. Place the chicken into a large mixing bowl.

  2. Add the Mix-ins: To the bowl with the chicken, add your halved grapes, diced celery, chopped red onion, and toasted sliced almonds.

  3. Make the Dressing: In a small separate bowl, whisk together the mayonnaise (or yogurt), lemon juice, fresh dill, salt, and black pepper until smooth and creamy.

  4. Combine and Toss: Pour the creamy dressing over the chicken and fruit/veggie mixture. Gently fold everything together using a large spoon or spatula until all the ingredients are evenly coated.

  5. Chill and Serve: While you can eat it immediately, this salad tastes best when the flavors have had time to meld. Cover the bowl and refrigerate for at least 30 minutes before serving. Enjoy on a fresh croissant, bread, or over a crisp bed of lettuce!

Storage Tip: Store any leftover chicken salad in an airtight container in the refrigerator for up to 3-4 days. Do not freeze, as the mayonnaise and grapes will not hold their texture once thawed.
