Strawberry Cheesecake Crunchies

Strawberry Cheesecake Crunchies

They feature a luscious, smooth cheesecake filling wrapped around a sweet strawberry core, all rolled in a nostalgic, buttery strawberry crunch coating. They look fancy, but they are incredibly fun and easy to make!

Ingredients

For the Cheesecake Filling & Center:

  • 16 oz cream cheese, softened to room temperature

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • ¼ cup heavy cream

  • ⅓ cup high-quality strawberry jam or strawberry pie filling (for the center)

For the Strawberry Crunch Coating:

  • 1 cup golden Oreo cookies (or vanilla wafers), crushed

  • 1 cup freeze-dried strawberries, crushed

  • 3 tbsp unsalted butter, melted

Step-by-Step Instructions

1. Whip the Cheesecake Base

In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until completely smooth and creamy. Slowly add the heavy cream and continue beating until the mixture thickens up and holds its shape.

2. Freeze the Strawberry Centers

To make assembly easier, drop small, half-teaspoon-sized dollops of your strawberry jam onto a parchment-lined tray. Pop them in the freezer for about 20–30 minutes until they are firm enough to handle.

3. Make the Signature Strawberry Crunch

While the centers freeze, mix your crushed golden Oreos and crushed freeze-dried strawberries in a shallow bowl. Pour the melted butter over the mixture and toss with a fork until everything is evenly coated and crumbly.

4. Assemble the Crunchies

Take a scoop of the cheesecake mixture, flatten it slightly in your hand, and place one of the chilled strawberry jam pieces right in the center. Carefully fold the cheesecake mixture around the jam, rolling it into a smooth ball.

5. Roll and Chill

Immediately roll the cheesecake ball into your strawberry crunch coating, pressing gently so the crumbs stick and cover it entirely. Place your finished Strawberry Cheesecake Crunchies on a clean tray and chill them in the refrigerator for at least 1 hour before serving.

Pro Tip: If the cheesecake mixture gets too soft while you are rolling them, just pop it in the fridge for 15 minutes to firm back up!
